Perfect Lenten Meal

Fridays in Lent don't need to be repetitious and boring. I love trying new and creative ways to upgrade the standard boring tuna fish. I have been wanting to upgrade my usual suspects.  This recipe is intriguing.

Tuna Stuffed in Tomatoes
inspired by:

2 cans tuna, drained & rinsed
1/4 cup mayonnaise
2 t balsamic vinegar
2 t Dijon mustard (whole ground)
1 -2 T dill pickle, chopped
1 hard boiled egg, chopped
7 water chestnuts, chopped
4 slices favorite cheese
4 large tomatoes, tops and "guts" removed

Mix all ingredients except for tomatoes and cheese. in a bowl. Put filling in tomatoes. Top with cheese. Bake at 375 for 25minutes until filling is hot and cheese is bubbly.
