The other night Mom made an intriguing meal. It looked so easy, and it was quite delicious. The boys loved it too. I recreated it the other night for my family. My husband enjoyed it too...he even ate a couple 'cups' for breakfast. Thank you, Mom, for the inspiration!
Taco Cups

1 ground beef
1 onion, diced
1 recipe Taco Seasoning
1 can diced tomatoes and chilies (ie Rotel)
1 can black beans, rinsed and drained
1 cup frozen corn
1 cup water
1 cup cheese, shredded fine (I used smoked cheddar & pepper jack)
2 (6biscuit) cans biscuits (divide in half as if you going to jelly-you should have 24 'biscuits')
1 cup shredded lettuce
salsa
sour cream
avocado, diced (or guacamole)
In a large skillet brown meat with onion. Drain off grease. Return to pan and stir in seasonings, tomatoes, beans and corn. Add water and simmer for about 20 minutes until water is mostly evaporated. Stir occasionally. Place biscuit halves in 24 greased (regular-sized) muffin tins. Press down and up sides of muffin tin. Place 1/8 cup meat mixture on top of biscuit. Top with 1T cheese. Bake at 400 for 12-15minutes until golden brown. Serve with lettuce, salsa, avocado or any other favorite taco toppings.
