The Love Of The Skillet Part 2


What can be easier than a one pot meal, especially Mexican. With Mexican food, it always seems like there is a lot of pots, and pans (especially when you have the beans, the meat, the cheese etc). With this one dish wonder, you will not be disappointed. I don't always use the cheese and sour cream. Either way, with or without, it is awesome.

Skillet Tamales


1 pound ground beef
2 cups salsa
3/4 cup frozen corn
2 T water
1 packet taco seasoning (1 recipe of my this recipe for Taco seasoning)
1 small can diced green chilies
6 corn tortillas, cut into 1/2 inch strips (I have even used a handful of corn chips, in a pinch)
3/4 cup cheese, grated
5 T sour cream.

In a large nonstick skillet, cook beef until no longer pink; drain. Stir in salsa, water, and peppers. Boil.

Stir in tortilla strips (chips). Reduce heat; cover and simmer for 10-15 minutes until tortillas are softened.

Sprinkle with cheese and dollop with sour cream. Top with guacamole and salsa if desired.
