Chips Are Topping What?!

As I have mentioned many times, BAP and SSP love their chicken tenders.  They also love their chips.  Last night I made the perfect combination of these two ingredients. The boys said they would eat only one...they ate 4 or 5 each.  They inhaled them.

Chip Crusted Chicken

3 pounds chicken breasts, sliced thin and into tenders (or just buy tenders)
2 eggs (2T Dijon Mustard)
1 cup buttermilk
2 cups potato chips, crushed (I have enjoyed this recipe with these bean chips)
1/4 t garlic powder (omitted if using flavored chips)
1/4 t onion powder (omitted if using flavored chips)
1/4 t pepper (omitted if using flavored chips)

Put chicken in a bowl with buttermilk and eggs; let chill together for about 5-7minutes.  In another bowl combine remaining ingredients. Take chicken pieces out, individually and then dredge in chip mixture. Place on a parchment lined cookie sheet. Spray lightly with cooking spray. Bake at 400 for about 20-25minutes.  Mmmm....
