Growing Boys (Loaded With LOTS of Veggies)

I recently discovered an interesting twist on garlic bread. I thought I would look around the web and see if there was something similar for pizza crust. I found many recipes.  They are good.  (BAP and SSP don't even notice a difference...or at least they don't complain when I make pizza this way.)  I made this for BAP's birthday last week; he was in heaven (since he had requested pepperoni pizza).

Cauliflower Crust Pizza

1 head cauliflower, chopped into florets (about 2pounds worth)
olive oil
1 egg
1 cup Parmesan cheese
Italian seasoning

Toss cauliflower pieces with a small amount of olive oil.  Bake at 400 for about 20-25minutes (until lightly browned) on a well greased cookie sheet.  After cauliflower is cooled slightly, pulse in food processor to form "rice".  Stir in egg, cheese and a small amount of Italian seasoning. Increase oven temperature to 450.  Spread out crust on a HOT pizza stone lined with parchment or baking sheet.  Bake about 25minutes more.  Remove from oven and top with your favorite pizza toppings. Reduce oven temperature again to 350.  Place back in the oven just until cheese is melted and gooey.
