On The 12th Day of Christmas....

We celebrate Epiphany when the three wise come and adore the Christ Child.  Yesterday  we celebrated this Feast at Mass, so I made a delicious sweet bread and some yummy scrambled eggs for breakfast.  It was so easy and delicious.  The boys LOVED this.

Bubble Bread (aka Monkey Bread)
adapted from:  http://www.rhodesbread.com/recipes/view/1613

18 Rhodes Dinner rolls, thawed slightly and split in half
1 small box butterscotch pudding mix
1/2 cup brown sugar
1/2 cup raisins
10T butter, melted

In a bowl combine pudding mix and brown sugar; set aside. Grease a bundt pan.  Dip each roll half into butter then pudding/sugar mixture.  Place in bundt pan.  Repeat until one layer is down in the pan.  Sprinkle with half the raisins.  Repeat with remaining rolls and raisins. Cover and place in fridge overnight.  The next morning as you are preheating oven to 350 take out rolls to come to room temp (take wrapping off).  Bake for 35minutes.  Invert on to a serving plate (or cookie sheet in my case).  Serve immediately.  Just pick a piece and enjoy.
