A few weeks back I was contemplating what to make for dinner...SSP and BAP suggested waffles.. I was thinking more along the lines of something taco related, as I was planning on Mexican for dinner. Being the mommy I am, I did not want the boys crying and/or screaming because I made them something they did not ask for. I asked Dr Google for insight on the matter. There I found results for a cornmeal waffle that would please everyone. I made half the batch without the spices and the other half with. MMM....Delicious.
Crunchy Cornmeal Waffles

1 3/4 cup buttermilk
2 eggs
1/3 cup oil
1 1/2 cups flour
1 cup cornmeal
2 T sugar
2 t baking powder
1 t baking soda
1 t salt
2 1/2t cumin (optional)
1/2 t Franks Hot Sauce (optional)
1/2 can (4oz) diced green chilies (optional)
Combine all ingredients in a bowl. Cook waffles according to your liking. Top plain ones with syrup and the sassied up ones with taco filling, cheese, salsa, etc.
