Superb Taste...Extraordinary Meal

Have you eaten a Costco Chicken Bake?  Growing up it was a special treat sharing/splitting one with Mom.  I prefer eating that over a hot dog any day.  Recently I thought it would be fun to make my own version at home.   However as I was in a time crunch I had no time to make dough for this...next time I hope to.  BAP and SSP just devoured this (except for the onions); it was a perfect impromptu meal.

Chicken Bacon Ranch Chicken Pasta
adapted from: http://www.halfhourmeals.com/recipe/cheddar-bacon-ranch-chicken-pasta

3 cups short pasta (I used large macaroni noodles), uncooked
6 slices bacon, diced
1 T butter
2 boneless skinless chicken breasts, cut into bite-size pieces
2 T flour
1/2 pkg ranch dressing powder
1 small onion, diced finely
1 3/4 cup milk
1 1/2 cups shredded cheese

Cook pasta according to directions (in order to make al dente).  In a large/deep skilletecook bacon. Remove bacon and most of the grease (leave about 1T in the bottom of the pan).  Throw in chicken pieces.  Cook  thoroughly.  Remove to another bowl.  Add butter and saute onions.  Stir in flour; once the flour and onions are all coated in butter, stir in milk. Thicken slightly.  Quickly stir in ranch mix and cheese.  Let cheese melt.  Add chicken and reserved bacon.  (thick a bit more).  Toss with cooked pasta in another bowl.  Serve to ravenous children.
