What The Boys DID Eat

I have had a heck of time to get meatloaf just right.  It is either too dry and crusty or too moist and had a gross texture.  However last night when I made it is was just perfect.  The boys LOVED it too.  I served with a side of couscous, which they gobbled up too.

Easy Moist Meatloaf
adapted from: Catholic Mom Cookbook

1 1/2 lbs ground beef
1 cup bread crumbs (fresh definitely would be better)
1 1/2 t onion powder (or 1 onion, chopped)
1 1/2 t garlic powder
salt/pepper
1 (8oz) can tomato sauce
1 egg

sauce
1 (8oz) tomato sauce
3 T cider vinegar
3 T sugar
2 T mustard
2 t Worcestershire sauce

Mix beef, crumbs, seasonings, tomato sauce and egg together.  Place in a shallow dish (pie pan worked well).  Mix sauce ingredients in another bowl.  Pour over meatloaf.  Bake at 350 for 1 1/2 hours. (Next time I might cover it for a bit with foil and bake 15minutes longer)  Perfection!
