Twist & Shout (From The Rooftops)

As I was perusing recipes last week I found an intriguing recipe.  I love changing up traditional recipes in order to give them a new flair.  My family LOVES Mexican cuisine.  This recipe was a perfect combination of both.  Even though I did not follow the recipe exactly, I know the same basic idea is there.

Mexican Tater Tot Casserole

1/2 pound ground beef
1/2 (16oz) can refried beans
1 small can green chilies, diced
1 small onion, diced
taco seasoning
water
1/2 (32oz) bag tater tots
2 cups shredded cheese

Brown meat in a large sauce pan with chilies and onion.  Add refried beans, taco seasoning and water (added more than 1/2 cup).  Mix together (this will be kind of soupy) and simmer 5 minutes (yes, it still be runny); remove from heat.  Add tater tots.  Grease a 9x13pan.  Place half the meat mixture in the bottom of the pan.  Top with 1 cup cheese then remaining meat mixture.  Bake at 375 for 25minutes until bubbly.  Top with remaining cheese.  Shut off oven.  Let cheese just melt.  Serve with your favorite taco toppings.
