Today being the Feast of the Assumption of the Blessed Virgin Mary, we had a mini-celebration for this special day. After a scrumptious meal of chicken alfredo over pasta (gluten-free and regular) we had this delicate tasty dessert. So yummy. I think the kids would have made this their dinner if we would have let them...but no go here.
Heavenly Assumption Parfaits

1 large package jell-o (I used raspberry)
1 (8oz) container cool whip, thawed and softened
Make jello according to package directions; chill well. Layer jello and cool whip in glasses 2-3 times (giving a cloud appearance). Beginning and ending with jello. This reciple makes about 8 (8oz) plastic cups worth.
