Green Speckled Noodles

No...it is not pesto.  I found a new and delicious way to intertwine the boys' favorite vegetable (broccoli) into one of their favorite meals.  If they could get away with it, I am sure that BAP and SSP would just eat bowl after bowl of steamed broccoli for dinner (and be perfectly content).  Come to think of it; they have done that.  They both love mac-n-cheese too.  I thought it would be ingenious to mix them (however I soon discovered that I was not the only one who thought of this).

Broccoli Macaroni & Cheese
adapted from: http://whiteonricecouple.com/recipes/broccoli-mac-and-cheese/

12oz small pasta, cooked until al dente
3 cups chopped broccoli, steamed and chopped
2 T butter
3 T flour
2 cups milk (I used part half-n-half)
garlic powder
onion powder
dry mustard powder
1 cup cheese, shredded
1/2 cup Parmesan cheese, shredded

Combine cooked pasta and chopped broccoli in a bowl.  In saucepan, melt butter. Stir flour until  smooth.  Add milk and spices.  Stir until bubbly and thickened.  Remove from heat and blend in cheeses.  Add cheese sauce mixture to pasta and broccoli. Combine thoroughly.  If desired you can bake at 375 until golden brown (about 25minutes).
