Cold Wet & Dreary - Time To Warm Up

On a cold day (as today started) I really think soup is perfect meal.  Even though this soup is meatless, I am sure it would be really tasty with coined cooked Italian sausages.  We are going to enjoy as is.

Minestrone Soup

3 cups broth, either veggie or chicken
1 (28oz) can diced tomatoes - I used Italian style
1 (15oz) can white beans, rinsed and drained
2 carrots, peeled and chopped - I chopped up a handful of baby carrots
1 celery stalk, chopped - omitted
1 cup onion, chopped
1 t dried thyme
1/2 t sage - omitted
1 1/2 t Italian seasoning (my addition)
1 T minced garlic (ditto)
2 bay leaves
salt/pepper
2 cups COOKED ditalini pasta
1 medium zucchini, chopped
2 cups coarsely chopped spinach
Parmesan cheese
basil

Combine broth, tomatoes, beans, carrots, celery, onions, spices and 1/2 t EACH salt and pepper in crockpot well.  Cook on LOW 6-8hours.  Before the soup is finished cooking, add pasta, zucchini and spinach and cook for 30minutes.  Remove bay leaves.  Serve up and sprinkle with Parmesan. Serve with bread to sop up broth.   NOTE: I lightly sauteed the onions, tomatoes and spices before placing in crockpot.
