Corny Good Idea

My family just loves corn.  When I made this meal I was unsure that they still would.   SSP ate 3 all on his own...he must have hungry.  I think this recipe would be even delicious with a handful or two of grated cheese inside, as well as some grated onions (with salsa, sour cream and avocados .  Oh the next time I make them!  This meal was easy and delicious.  We topped them with maple syrup when we had them.  mmm...

Griddle Corn Cakes

1 cup cornmeal
1/2 cup flour
1 t baking powder
2 t chili powder
1 t cumin powder
1 t salt
2 eggs, beaten
1 cup milk
2 T butter
2 T sugar
4 cups frozen corn, thawed
1 small can diced green chilies

In a medium bowl combine cornmeal, flour, baking powder, chili powder, cumin  sugar and salt.  In a glass measuring cup combine milk and butter; warm (until butter melts).  Whisk into dry ingredients; add eggs.  Fold in corn and chilies.
Heat griddle or frying pan.  Grease with additional butter.  Drop by 1/4 cup-fuls on to hot griddle.  Fry up.  It is time to flip with edges start looking dry.  (makes about a bakers' dozen)
