Wonderful Cheesy Goodness (& Chicken)

I was experimenting in the kitchen recently and came up with a delicious recipe.  I love it when my experiments work.  This recipe requires very little new ingredients (just used the leftovers that we had lingering on hand)...I love that.

Chicken Breasts Stuffed with Broccoli, Cauliflower & Cheese

2 smallish chicken breasts, skinless & boneless (cut in half in such a way that there is a small pocket)
1 pkg broccoli & cauliflower with cheese sauce,  cooked (I used one of those steam bags)
1 T leftover cheese dip (salsa con queso)
1 T milk
1 cup shredded Mexican style cheese
1 envelope shake and bake

Heat milk and cheese dip in microwave until just warm (about 25 seconds .  Stuff chicken breasts broccoli/cauliflower mixture.  Dip in cheese dip/milk.  Roll around in shake and bake until well coated.  Place in a greased oven-safe pan.  Sprinkle with shredded cheese.  Cover with foil. Bake at 375 for 45 minutes.  Uncover and bake an additional 15.  Serve over hot rice.  Our chicken was very moist and delicious.
