If you love the taste of Rolos you will love these tasty bites. They are so perfect. My dear husband loves caramel in any shape or form (as long it is soft and chewy and not hard). He loved these cookies. Definitely a keeper! I really enjoyed them too...had to have 'another one'. They are slightly addictive.
Salted Caramel Chocolate Chip Cookies

2 cups flour
2 t cornstarch (ideal if you want soft chewy cookies)
1 t baking soda
1/2 t sea salt
3/4 cup UNsalted butter, room temperature
1 cup brown sugar
1/4 cup sugar
1 egg
2 t vanilla extract
1 cup chocolate chips
1/2 cup caramel bits (or chopped up whole caramels)
additional sea salt
Cream together sugars and butter. Add eggs and vanilla mix well. In another bowl whisk together flour, soda, cornstarch and salt; add slowly to butter and egg mixture. Stir in chocolate chips and caramel bits. Drop by spoonfuls on to parchment lined (necessary to use because of gooey caramel) cookie sheet. Sprinkle with sea salt if desired. Bake at 350 for 10 minutes. Cool slightly. Remove to wire racks and cool completely (I found cooling upside down kept the caramel bits from falling out). These cookies freeze well too (if they make it that far). Enjoy with ice cream or a glass of cold milk.
