Today we celebrate the life of one of our very good friends. He happens to be the same friend that made the amazing cabbage rolls. I have never been able to make his Philly Steak sandwiches as he did but I often try. This recipe happens to be the closet I have come (even without the aide of a meat slicer). Happy birth into Heaven, George! We love and miss you.
Shredded Beef (for Philly Steak Sandwiches)

1 (4-5pound) round eye roast
water
2 onions, sliced
lots whole garlic cloves
Place onions in a greased crockpot. Put meat on top. Top (3/4 of the way up) with water. Put in garlic cloves. Cook on low 8-10hours. Remove from crockpot. Shred. Dump some of the water (all but about 1/2 cup). Return to pot. Serve on hoagie rolls with provolone/mozzarella cheese and sauted mushrooms and peppers. mmmm....
