A Sweet Treat For Your (GlutenFree) Sweetie

Today is St Valentine's Day.  Traditionally it is celebrated by writing 'love notes' to those we know, love and care about.  More stories and information on St Valentine can be found here.  BAP, SSP and I made goodies which we hope to deliver (despite this winter storm...4 inches and counting).  Ugg...I thought the silly ground hog predicted spring, not more winter.  I would like to share one of our favorite treats.

Molten Chocolate (Flourless) Cupcakes

8oz bittersweet chocolate, chopped (I use chocolate chips)
1 stick unsalted butter
1 cup heavy cream
4 eggs, room temperature
1 1/3 cup sugar (if using chocolate chips, scale back to 2/3 to 1 cup sugar)
1/2 cup mayonnaise (yes mayonnaise--gives them moisture)
1/2 cup cornstarch
1/2 t ground cinnamon
1/2 t gray salt (usually omitted since I use salted butter)

Preheat oven to 300.  Line one (12-hole) muffin tins with paper liners and greae the inside of those liners...yes, do both.
Warm cream and melt butter. Pour over 5oz of the chocolate.  Stir to melted.  In another combine together eggs, sugar, mayonnaise, cornstarch, cinnamon and salt.  Gently mix in chocolate mixture; until just combined.  Pour 1/4 - 1/3 cup batter into each muffin well.  Bake 40-45minutes until toothpick comes out clean. Press small amounts of remaining chocolate into the center to create a molten effect (if deisred). Cool about 10 minutes before removing from pan.  Unmold.  Dust with powdered sugar or if desired frost them. mmmmm....Happy Valentine's Day!
