Tonight was a good night for salad or chili. Hmm. My chili rarely turns out how I like (and when it does I forget to write it down). I am sharing this recipe since a) it was definitely a keeper, b) it was outstanding, and lastly c) I don't want to forget again. All of us enjoyed this.
Chili (An Accidental Favorite)
2 pounds ground beef
1 large onion, diced
2 T olive oil
1/3 cup chili powder
2 T ground cumin
1 t garlic powder
1 1/2 t onion powder
3 cans black beans, rinsed and drained
1 can diced tomatoes
1 can Rotel tomatoes
1 recipe Enchilada sauce or 1 large can and small can (we like the red)
1 cup water
In a large pan saute onion with ground beef and olive oil. When the meat is mostly cooked add chili powder, onion powder, garlic powder and cumin. Cook thoroughly. Dump meat mixture into crockpot. Add beans and tomatoes. Stir in enchilada sauce and water. Turn crockpot on LOW for at least 6hours (the longer the better to get flavors to meld). Serve with corn chips, salsa and cheese (or for taco salad add lettuce)
