MMM...Melt-In-Your-Mouth Goodness

I love it when you take a bite of something and it just melts in your mouth (or as hubby says 'dissolves').  It is just a wonderful feeling.  Mmmm... Recently I made some bread that does that.  How does bread do that since it is usually so dense and chewy.

Melt-In-Your-Mouth Lemon Bread

Bread
1 box lemon cake mix
1 cup boiling water (I just really hot tap water - since I did not want to scramble the eggs)
4 eggs, slightly beaten
1 pkg (small) lemon pudding
1/2 cup vegetable oil
1/3 cup poppy seeds, optional

Mix all ingredients together in a large bowl until creamy looking (about 4 minutes).  Pour into 2 standard loaf pans.  Bake at 350 for about 45minutes.

Glaze (optional)
1 cup powdered sugar
6 T lemon juice
1 T margarine, softened

Bring to a boil, stirring constantly.  Punch little holes (with a tooth pick) then slowly pour over bread.
