I love anything and everything peppermint (even better when you combine it with a good old taste of chocolate along with it).  I love making peppermint easy and simple.  Almost could do it with my eyes closed (however that could end up disastrous)...almost.

Peppermint Bark
adapted from:

1 pound white chocolate (white almond bark works well too)
1/2 - 1 t peppermint extract (depending how minty you like too)
25 starlight mints, crushed (7 candy canes work well too) You can always add even more or less.
couple drops of red food coloring, optional

Melt white chocolate in a double boiler.  Stir until smooth.  Stir in peppermint extract.  Add crushed candies. Spread on large foil-lined (greased too) cookie sheet.  Swirl in color if desired.  Chill.  Break up into pieces.  Keep cold so it does not melt.
