Here is a trip down memory lane for my husband and his family. It is quick and just as easy (or do I think it seems that way since I enjoy cooking so much).

3 cloves garlic, crushed and peeled
2 medium carrots, cut into 2 inch pieces (or half dozen baby carrots)
10 oz white mushrooms
1/2 small onion, cut into chunks
1 pound ground beef
1 1/2 t Cajun seasoning
2 cups water
1 14-oz can beef broth, divided
3/4 cup macaroni noodles or about 4 oz dried
2 T flour
1/2 cup sour cream
Puree (shred) onions, carrot and mushrooms (until 'invisible' to a picky eater). Brown meat and add veggies in a large pot (I doubled my recipe and used my 5 quart Dutch oven). Add water, 1 1/2 cups broth, and noodles. Boil. Turn down, simmer and cover (stirring occasionally until pasta is tender). Whisk flour and remaining 1/4 cup broth together until smooth. Add to meat mixture. Stir in sour cream. Stir until slightly thickened about 2-3 minutes. Serve (with shredded cheese if desired-good without too).
