Smells Like Apple Pie

If you love apple fritters (or any donut), you will love this tasty little bites.  One bite wonders!  We loved them; great alternative to the deep fried doughnuts.  BAP wanted to eat them all...especially the ones that got the extra sugary coating. They will melt in your mouth.  Bet you cannot eat just one.

Oven Bake Apple Donuts

Donut
1/4 cup brown sugar, packed
1/4 cup sugar
1 1/2 cups flour
1 3/4 t baking powder
1/2 t cinnamon
1/3 cup COLD butter
1 T flax seed mixed with 3 T water (or 1 egg)
1/4 cup milk
1 1/2 cups bite size chunks of apple (1 fist size granny smith worked well)

Topping
1/4 cup butter melted
1/3 cup sugar
1 t cinnamon

Preheat oven to 350.  Grease mini muffin tin WELL (do not use liners).
Combine dry ingredients together in food processor.  Add butter in chunks.  Mix until coarse sand.  Add milk and egg (or flax seed mixture).  Fold in apples by hand.
Bake 15-18 minutes until just golden brown. Remove from oven.  Immediately dip muffins one at a time into butter then cinnamon and sugar.  Serve immediately.
