Goodness Gracious

Oh wow! These are to die for. I am sorry that I am late in posting but these are the BEST waffles around, crisp airy and just melt-in-your-mouth goodness. They are often made in honor of the Blessed Virgin Mary for the Feast of the Annunciation (March 25) - Mary's Yes to the Angel Gabriel about being the Mother of God. We all just love these waffles. No real need to add any 'extras' if you don't like.

Annunciation Waffles

1 3/4 cup heavy cream, well chilled - whip up
1 1/3 cups flour
1-2 T sugar
salt
1/2 cup cold water
3 T melted butter, cooled

Combine flour, sugar and pinch of salt. Add water to make smooth batter. Fold in whipped cream. Stir in butter. Place about 1/3 cup-fulls of batter on well-seasoned/greased waffle iron (iron should be 2/3 full). Bake. If you really must, enjoy with more whipping cream, syrup, berries, etc; whatever your favorite waffle toppings are. Oh to feel like a little kid again.
