All White Meal

Tomorrow is December 8. A special feast day at our house. I have heard from a number of Catholic Mommies (ie at CatholicCuisine's blogspot) that an all-white meal is a special way to celebrate any Marian feast. I am going to 'put that to the test' around here. I thought Chicken Cordon Bleu would be appropriate. (Warning: This may sound weird; St Ann as the Chicken breasts and the Mother Mary as the ham.) I hope to serve to mashed garlic potatoes and corn on the side. If I feel ambitious maybe a dessert.

Chicken Cordon Bleu
(special note: I am halving this recipe)

8 boneless skinless chicken breast halves
8 thin slices deli ham
8 slices swiss cheese
2 eggs
1 cup milk
2 cups crushed cornflakes
1/2 t garlic powder
1/2 t salt

Flatten chicken breasts. Top with ham and cheese. Roll. Secure with toothpicks.
Combine eggs and milk. Combine cornflakes and seasonings. Dip stuffed chicken in egg-milk mixture. Then coat in cornflakes.
Bake at 350 for 40-45minutes (until liquids are clear) on greased cookie sheet.
