Christmas Cookies

One of the Christmas cookies one of my little brothers always requested was "Pooh Cakes" (otherwise known as Mexican Wedding Cakes). They are very good and addicting. However they have nuts in them; it poses a problem for me (a migraine). I found this recipe last Christmas and I absolutely love it. Even though it is not the original cookie, you will love it too.

Peppermint SnowBalls

1 cup butter, softened
10 drops red food coloring
3/4 cup powdered sugar
1 t vanilla
1/4 t salt
2 1/4 cup flour
1/2 cup rolled oats
1/4 cup crushed peppermint starlight candies (about 10-20)
extra powdered sugar

Cream butter, food coloring and sugar. Add vanilla and salt. Combine in flour, oats and mints. (NOTE: dough will be crumbly.) Roll into little balls. Toss in extra powdered sugar. Bake on greased cookies sheets at 400 for about 10-14 minutes.
Also these taste awesome if you substitute green food coloring for the red and spearmint starlight candies.
