I'm inspired by Barefoot Contessa (Ina Garten) from Food Network. When watching her on TV, I feel like I am an old friend coming over for a meal (and get to watch the preparation involved too). Recently I tried two recipes, they were so good. Who does not love a good roasted chicken? Brownies?
Lemon Chicken With Croutons

1 (4-5lb) roasting chicken, giblets & neck removed
1 large onion sliced
Olive Oil
Salt
Pepper
2 lemons, quartered
2 T butter, melted
6 cups bread cubes (3/4 inch) - my bread was homemade and it was still doughy, so had to omit :(
Preheat oven to 425. Toss onion in olive oil. Place in well greased roasting pan. Place chicken on top of oiled sliced onions. Place lemons inside of chicken. Brush with melted butter. Sprinkle with salt and pepper. Roast for 1 hour 15minutes to 1 hour 30 minutes (until temp is 180). Baste every 25-30 minutes. Let sit at room temperature before slicing for about 15minutes.
Brown bread cubes in olive oil. Serve chicken on top of bread cubes. Pour pan juices over all (chicken and bread cubes).
Brownie Pudding (BAP wanted it all)
2 sticks butter, melted & cooled
4 eggs, room temperature
1 1/2 cups sugar
3/4 cup cocoa powder
1/2 cup flour
1 1/2 t vanilla extract
Preheat oven to 325. Generously grease a 1 1/2 quart baking dish.
Beat eggs and sugar together until thick and light yellow. Add vanilla. Sift cocoa and flour together; slowly add. Mix until just combined then stir in melted/cooled butter.
Pour brownie mixture into greased dish. Place in a larger baking pan. Add HOT tap water (come up half way on brownie mixture dish). Bake 1 hour. Toothpick test will come out a little 'raw'. This is how you want it.
Serve with ice cream or whip cream, if desired.
