Good Ol' Italian

The other night I volunteered to make dinner for my siblings. I know that they like Italian so it would be simple and easy to please them. (who does not like good old cheesiness?) I rummaged through a few trusty cookbooks and I found the perfect recipe. It would be simple and easy to make. Great combination since it is sometimes hard to cook when little ones are running around at your feet as you cook. I am in fear that they will grab at the oven when I open the door. Has not happened yet!

Cube Steak Parmigiana

1/2 cup flour
garlic powder
onion powder
2 eggs, beaten
2/3 cup Italian breadcrumbs
1/3 cup Parmesan Cheese
4 cube steaks
3 T canola oil
3/4 can of favorite tomato sauce (I use Hunt's Garlic and Onion)
4 slices mozzarella cheese

Preheat oven to 375.
In a bowl combine flour, onion and garlic powders. Coat each steak. Let rest on a cooling rack to soak it in when dredging the other. Next splash steaks into eggs. Next dredge into breadcrumbs and Parmesan (mix in a bowl ahead of time). In a large skillet with the oil, lightly fry steaks until light golden brown.
Pour 1/2 tomato sauce into a greased 9x13 pan. Place cooked steaks in there. Add the rest of the tomato sauce on top of steaks. Lay cheese slices on top of steaks. Cover with foil and bake for 30-45minutes. Serve over pasta (I used bow tie pasta)
