From Snack to Main Attraction

We love Mexican food around here...so hearty and yummy. I discovered this recipe and just had to try it since I had all the ingredients. SO PERFECT. I recommend if you love snacking on hearty food other than just measely-bite size morsels.

Creamy Chicken Taquitos

3 oz cream cheese, softened
1/4 cup salsa
1 T lime juice
1 t chili powder
1/2 t cumin
1/2 t onion powder
2 garlic cloves, minced
1/4 t coriander ground
2 cups shredded cooked chicken (this is my favorite recipe)
1 cup shredded cheese
10-12 small flour tortillas (fajita size)

Preheat oven to 425. Line cookie sheet with foil. Grease well. Combine all ingredients minus tortillas. Spoon filling into each tortilla. Wrap up and place on cookie sheet. Bake for about 20-25 minutes.
