Oven Roasted Potatoes

My husband loves anything with potatoes. (A constant staple when he was in college)


Oven Roasted Potatoes

3 Idaho/Russet potatoes, peeled and diced (into larger chunks about 10-12 slices per potato)
1/2 large onion, sliced
2 T olive oil
1 1/2 t seasoning (I used the best season-all)

Toss all ingredients together. Line a cookie sheet with foil. Grease. Preheat oven to 475. Dump potatoes et al on the cookie sheet. Bake for 25 minutes, or until potatoes are tender. It is even good with Parmesan cheese sprinkled on them for the last 5 minutes. mmm...am I making your mouth water?
