Marvelous Chimichangas

We love Mexican food around here. I think it is my all-time favorite type of food. Several years ago I found a recipe for Baked Chimichangas (they are just as good or better than the fried ones you get at a Mexican restaurant). My husband loves them.

Baked Chimichangas
1 pound ground beef, browned and drained
1 small onion, diced and softened with browning ground beef
1 recipe taco seasoning
1 can (14.5 oz) black beans, rinsed and drained (add to ground beef after browned before seasoning)
1 cup shredded cheddar cheese (Monterey Jack would work well too), stir in
10 flour tortillas

Put a small amount (1/4 -1/3 cup) filling in tortillas. Fold the ends over. Fold other ends over to make a pocket. Place on greased cookie sheet. Repeat with remaining ingredients. Spray with cooking spray. Bake at 425 for about 15-20 minutes until desired golden-brown hue is reached.
