Rice and Beans
1 cup rice
2 cups water (can substitute up to 1/2 cup of salsa)
1 T butter
Put in a small saucepan. Bring to a boil. Cover and reduce to low and cook 15 - 20 minutes.
In another sauce add a 14.5 oz can of rinsed and drained beans. Add some taco seasoning. Add 1/2 cup water. Heat throughly.
Pile the beans on to the rice and add your favorite taco toppings.
Serves 3-4
