Today We Celebrate

Today is one SSP Feast Days.  Some dear friends gifted us with dinner tonight...lasagna.  One of SSP favorites. When the meal was offered I did not realize what day it was.  Last night as i looked on the calendar I realized that it was SSP feast day with one of his favorite meals.  What a Godsend this meal was!  I was actually thinking of making a similar recipe...so it was a perfect substitute.

Meatball Penne Dish

15-24 pre-made meatballls (cooked)
1 (12oz) box penne pasta,cooked until al dente
1 (29oz) favorite pasta sauce mixed with a little water
1 (12oz) full fat cottage cheese
2-3 cups shredded mozzarella

Preheat oven to 375. Pour a little pasta sauce in the bottom of a greased 9x13 pan. Top with about half of the pasta.  Then cottage cheese.  Next top with ALL the meatballs. Sprinkle with 1 third of the cheese. Pour on half of remaining sauce. Top with remaining pasta then sauce. Cover and bake 45minutes. Remove cover and top with remaining cheese. Bale UNcovered until golden about 15 minutes longer.
