Heavenly Tasty Hot Cakes

Meatless Fridays are not only a Friday in Lent meal.  We have been trying to eat meatless all year, so it comes second nature per se.  We have enjoyed many tasty meals this way. I thought pancakes would be fun and easy.  I found this recipe - definately a major hit. The second pancake recipe is even better, especially since there is NO flour.

Sour Cream Pancakes

1 cup sour cream
7T flour (or 54g rice flour)
2T sugar
1 t baking soda
2 eggs
1/2 t vanilla

Mixing all ingredients well.  Pour on to a greased griddle (preferably greased with butter.)  Serve with any traditional breakfast toppings.

Cream Cheese Pancakes

4oz cream cheese
4 eggs
2 t sugar
sprinkle of cinnamon, optional (very tasty addition)

Combine all ingredients until smooth. Fry in 1/8 cup measurements on a hot buttered griddle.  These pancakes spread a lot and cook fast. Watch them carefully so they do not burn.  Enjoy!
