Wellness Wrapped Up In A Bowl

My dear husband and boys were hit by the illness truck.  All three have coughs and sniffles. It hit them hard.  I was planning something quite different for dinner, but husband requested chicken noodle soup so he could feel better soon.  I found this recipe; it was intriguing.  I did not add the escarole, since I think BAP and SSP would not approve of lettuce or the sort in their soup.  I made the soup extra fun by using pasta stars instead of orzo.

Escarole & Orzo Soup with Turkey Parmesan Meatballs

1 large egg
2 T water
1/4 cup dried bread crumbs
12oz ground turkey
1/4 cup fresh grated Parmesan cheese
2 garlic cloves, minced
1/4 t pepper

8 cups low salt chicken broth
1 cup chopped and peeled carrots
1 1/2 cups star shaped little pasta
4 cups chopped escarole

Combine egg, water, bread crumbs, turkey, Parmesan, garlic and pepper in a bowl.  Form in to 18 smallish meatballs...place on a cookie sheet and put in fridge for about 30minutes before continuing.
Boil chicken broth in a large pot.  Add carrots; simmer about 7minutes.  Add pasta and meatballs. Simmer for about 10 minutes.  Add escarole and simmer and additional 5minutes, until wilted.
Serve with crackers and additional Parmesan cheese.
