Season Greetings To Fall!

My dear husband LOVES loves anything related to pork.  As I have not made anything porky for awhile I think he was very happy with dinner. It was so moist.  I was a bit nervous at serving this to BAP and SSP thinking that they would not enjoy it as much as daddy, but they are growing men after daddy's own stomach.  It was a perfect dish for welcoming fall this year.  Very fall tasting...with the apples and onions.

Apple & Onion Pork Loin

1 1/2 cups apple juice/apple cider (I just used my last HOT apple cider packet, made with extra water)
1 3/4 lb pork tenderloin (I got a garlic and herb one from the meat department at the store)
2 T olive oil + 1 T butter
2 small onions, chopped into big chunks
5 small apples, peeled - cored - chopped
2 cloves of garlic minced
2 t dried thyme

Preheat oven to 325.  Heat oil in dutch oven over medium high heat.  Once oil is hot quickly sear the pork loin (salt and pepper if unseasoned) on all sides - to lock in juices.  Once seared, remove from pan; set aside.  Reduce heat and add apples, onions and garlic.  Saute slightly.  Add cider/juice and boil.  Add thyme.  Stir.  Return pork loin to pot.  Cover and place in oven.  Cook for 1 hour and 30minutes (or until internal temperature is around 175).  Let rest for about 7minutes. Slice and serve covered in apple/onion mixture.
