Dragon Drumsticks

Today is one of my (three) God-Daughter's birthday.  She loves anything princess-y.  These dragon sticks are in honor of her.  She is a-waiting in her castle for her-someday-prince charming.  (Sidenote: she is only 3).  Happy Birthday, Sweet God Daughter!

Dragon Drumsticks

8 skinned bone-in chicken drumsticks (I bought them with skin and just peeled it off)
1 1/2 cups buttermilk (combined with 1/2 t each paprika, onion powder and garlic powder PLUS a sprinkle of salt and pepper)
1/2 cup cornmeal
4 egg whites, beaten until frothy
1 pkg ranch dressing mix
2 1/2 cups rice krispie cereal
1/4 cup Parmesan cheese
6 T butter, melted

Combine buttermilk, spices, and drumsticks in a zip bag. Place in the refrigerator for 6-8hours.
Line a baking sheet with foil.  Place a cooling rack on it. Grease with cooking spray.  Coat each marinated drumstick in cornmeal.  Place on cooling rack. Repeat so all are coated. Cover with cling wrap.  Return to the fridge for at least 1 hour.  Whip up egg whites in a bowl. In another bowl combine cereal, ranch mix, and Parmesan. Dip chicken in egg whites then coating evenly with cereal mixture.  Place back on cooling rack.  Drizzle with melted butter. Bake at 350 for an hour.
