Best Thing Since Sliced Bread...

...is HOMEMADE sliced bread.  Hmm.  This morning SSP went to the fridge and wanted the jelly (I could not agree more about eating Costco's Red Raspberry straight from the jar).  We did not have any bread to spread it on.  I was determined to make some by lunch time. (I did but it was after he decided that both boys ate "dino bones" - aka chicken nuggets - for lunch.)  I guess we will just have fresh bread for snack later.  I doubled this recipe (and made 3 loaves). Two are in the freezer for a different day; the other on my counter rack cooling completely.  I cannot wait to try this...SSP will thrilled that he can have 'jelly bread'.



Oatmeal Bread

1 cup oatmeal
1 cup boiling water
1/2 cup warm water
2 1/2 t yeast
2 1/2 cups flour
2 T sweetener of choice (brown sugar, honey, etc) - I used honey
1 t salt (omitted since I use salted butter)
2 T butter, cut into chunks (I just melted)

Combine boiling water and oats in a bowl. Stir and set aside. Cool slightly.  In your stand mixer combine warm water and yeast.  Add rest of the ingredients and room temperature oatmeal.  Knead slightly...add more flour/water as necessary.  Remove dough to a greased bowl.  Grease.  Cover and let rise.  Form into 1 loaf.  Let rise again.  Bake at 375 for 30-40 minutes.  Spread with butter and/or jelly.
