Last night we celebrated my husband's birthday (he's 30 now...shhh don't tell). Even though he was supposed to pick out a meal he asked me to pick out a dinner...what?! (so un-traditional!) I was dumbfounded that he wanted me to pick out his meal for his special meal. I asked him if he would rather have meatloaf or tater tot casserole. I had barely finished saying tater tot casserole; he immediately jumped out that band-wagon. Both BAP and SSP enjoyed it. SSP finished his completely where BAP did not (he ate it mostly). BAP had his sneaky eye on the upcoming dessert (cheesecake).
New & Improved Tater Tot Casserole

Tater Tots (about 1/2 of 32oz bag)
1 bag (24oz) frozen broccoli, carrots, cauliflower with cheese sauce
1 cup milk
1 T butter
1 T flour
1/2 cup shredded cheese
1 pound ground beef
1 t garlic powder
1 medium onion, diced
Cook veggies according to package directions. In a saucepan brown ground beef with onion and garlic powder (drain if necessary). Remove to a large bowl. Add veggies. In the same saucepan melt butter over medium heat. Stir in flour (until smooth and paste-y). Slowly pour in milk. Whisk together; bring to a boil to thicken. Mix sauce with meat and veggies. Pour mixture into a greased 9x13pan. Top with tater tots (just to cover). Place in a 375 oven for about 45 minutes. During the last 15 minutes sprinkle with grated cheese.
