Oh how BAP and SSP love their broccoli...yes, you read correctly LOVE. Tonight I was feeling kind of lazy so I wanted something quick and easy...these sure did the trick. All here are satisfied with mom's choice for dinner. UNUSUAL...unless its mac and cheese! The boys are even going for seconds (or so I thought until BAP just put his seconds back and now is back again for it). These gems are especially good with ketchup and crinkly French fries on the side.
Impossibly Easy Mini Chicken 'n Broccoli Pies

1lb boneless skinless chicken breasts, cooked and chopped into little bite-size pieces
1 medium onion, chopped (used garlic and onion powder...wish I would have used the real thing)
1 cup frozen broccoli, thawed & drained (steamed lightly)
1/2 t salt
1/4 t pepper
1 cup shredded cheddar cheese, just cut into tiny cubes since I was being lazy
1/2 cup (used 3/4 cup) Bisquick mix (some of this recipe)
1/2 cup (again 3/4 cup) milk
Preheat oven to 375. Grease 12 regular size muffin cups well. Combine filling ingredients in a bowl. Combine roll part in another bowl. Pour 1 T roll mixture into muffin cup. Top with 1/12 of filling. Top with another 1 T roll mixture. Repeat until all muffin-wells are filled. Bake for 30 minutes until knife comes out clean.
