I love making things healthier, if at all possible. I know that it is hard to imagine a 'healthified' cookie actually tasting good but this recipe sure tricked me (as well as hubby and boys). The boys could hardly wait until they cooled before eating them.
All-Bran Chocolate Chip Cookies

1 1/4 cup All Bran Cereal (I used Bran Buds)
1/2 cup whole wheat flour
1/2 cup all-purpose four
2 t baking powder
1/4 t salt
1/3 cup vegetable oil (I want to try with apple sauce next time)
1 egg
1 1/2 cups brown sugar
1/2 t cinnamon (my addition)
1 t vanilla
3 T water
3/4 cup chocolate chips
1/3 cup chopped pecans (just added an additional 1/4 cup chocolate chips instead)
Grease a 9x13 pan well (or lined with greased foil). Combine cereal, flour, baking powder and salt in a small bowl. In a large bowl, cream together oil, egg and sugar. Stir in vanilla and water. Add cereal mixture; combine just until incorporated. Gently stir in chocolate chips and nuts. Pour into greased pan. Bake at 350 for about 30 minutes until golden brown. Enjoy with a glass of cold milk.
