Even Though We Are Not Swedish...

Growing up I read many of the American Girl books; I particularly loved the books about Kirsten.  In the 4th book (Kirsten's Surprise) the family celebrates St Lucy's Day (Dec 13).  My mom made these rolls multiple times.  Every time she did I always felt like I had stepped back into Kirsten's time.  These rolls are mouth-watering good.  Enjoy!

Scandinavian Cinnamon Rolls

Rolls
1 pkg yeast
1/4 cup water
4 cups flour
1/4 cup sugar
1 t salt
1 cup cold butter, cubed
1 cup warm milk
3 egg yolks

Filling
3 T butter, softened
1/2 cup sugar
2 t cinnamon

Glaze
1 1/2 cups powdered sugar
2 T butter, softened
1 1/2 t vanilla
2 T milk

In your mixing bowl, combine water and yeast. In another bowl cut butter into flour, sugar and salt.  Mix (and form and soft dough).  Cover and chill at least 4 hours to overnight.  Once chilled roll dough out into 2 rectangles.  Spread with butter then sprinkle with cinnamon and sugar.  Roll as if you were making traditional cinnamon rolls.  Cut each log into 12 pieces/slices.  Place in greased muffin tins (should be 24 standard muffin tins).  Let rise until doubled (at least an hour).  Bake at 375 for 20-25 minutes until golden. Remove to wire racks to cool slightly. For glaze cream sugar and butter together; add milk and vanilla.  Combine until smooth.  Drizzle warm rolls with glaze.
