Blustery Days Call For Soup...

The last couple days have been horribly cold and windy around here.  Yesterday morning it rained; I thought it sounded like a soup day.  MMM....  I had been eyeing this soup recipe for quite awhile.  However when it is in the 70s (or higher) outside soup sounds very un-appealing.  I am glad that we tried it.  Husband thought it was great.  However the kiddos would NOT touch it. Surprise, surprise.  They just wanted their leftover pizza.  This soup actually tasted somewhat like pizza.  hmmm. Maybe next time they will brave and (at least) try it!

Cannellini Bean Stew with Tomatoes, Italian Sausage & Kale

5 links Italian Sausage, cooked & when cool-slice into coins (I just bought Italian sausage and made it into meatballs-browned lightly in olive oil)
2 cans (14.5oz) diced tomatoes in juice
2 cans (15oz) cannellini beans, rinsed and drained
2 T minced garlic
1 t dried basil
1 t dried oregano
2 cups chicken broth
4 cups baby kale
freshly grated Parmesan cheese

Combine tomatoes, beans, garlic, basil, oregano and broth into crock pot.  Add sausage.  Cook on low at least 5 hours.  Add kale and cook for another 1 1/2 on low.  Serve hot with a sprinkle of Parmesan cheese and thick-sliced garlic bread. (I doubled this recipe and froze half before heating, so I can just heat and serve later....glad I did.)

  2. Yum - sounds kind of minestrone-ish? I agree about cold weather and soup going together. Maybe we'll have to try a veggie-version of this soon. God bless!
