Yummy Green Dessert

I know when things out of the ordinary are placed in a recipe, it just sounds weird (sometimes just disgusting).  This recipe sounded weird but I HAD to try it since I had a lone zucchini just sitting on my counter saying, "Eat me".  This dessert is that good...it did not matter how weird it sounded in the beginning.  The boys and hubby loved it too.

Chocolate Chip Zucchini Brownies

1 1/2 cups white sugar
1/2 cup canola oil
2 cups flour
1/4 cup cocoa powder
2 cups shredded zucchini
2 t vanilla
1 t salt
1 1/2 t baking soda
1 cup chocolate chips (M&Ms work well here)

Preheat oven to 350.  Grease an 8x11pan with cooking spray (9x13 works like a charm).
Combine sugar, oil and flour until it resembles wet sand.  Slowly add cocoa, zucchini, vanilla, salt and baking soda; mix well.  Fold in chocolate chips.
Pour batter into prepared pan.  Bake for about 25-30 minutes until toothpick comes out clean.  Cool completely.  Serve with ice cream. MMM...
