Sorry BAP This IS Dinner...Not The Cheerios Or Broccoli

The other night for dinner I made pork with apples, onions and potatoes. It was instantly a hit. We all (of those of us who tried it) loved it. (Note: BAP would not touch his piggie. Hmm...is cheerios and broccoli the fate of the rest of his life.) Anyways I wanted to share the awesome pork recipe. If you do make this recipe, make sure you plan at least 2 days ahead.

Pork with Caramelized Onions, Roasted Potatoes, & Apples

5 pounds boneless pork roast (I used 2 - 2 pound boneless tenderloins)
1 cup caramelized onions *
1 pound baby read skin potatoes (I peeled and diced)
2 apples, cored and sliced (I peeled too)
1/4 cup water
1/4 cup balsamic vinegar
1 t paprika
1/4 t pepper
1/4 t cinnamon
1/8 t salt

Sear pork quickly in non-stick pan. Place in 4 quart slow cooker (greased). Top with onions, potatoes and apples. Add water and vinegar. Sprinkle on spices. Cover and cook on low for 8 hours.

*Caramelized Onions
4 pounds sweet onions (I used only 3 pounds), sliced thin into rings
3 T butter
1 (2) T balsamic vinegar

Add onion slices to crockpot. Add butter (thinly sliced) all over the top. Drizzle with vinegar. Cook on low for 10 hours. If still wet at end, uncover and cook on high for 30 minutes.
