Ever-So-Tasty Moist Meat Loaf

Tonight I made the best meatloaf that I have ever made. It was SO moist...I am guessing it was the potato and carrot that did it. We had meatloaf sandwiches for dinner. So yummy. Just used hoagie rolls and cheddar cheese. Glad I have leftovers. Maybe will eat sandwiches later in the week or use meat for spaghetti. hmmm....

New-Style Meat Loaf

1 egg white
1 1/4 cups soft bread crumbs (used leftover Bloomin' Herb Bread crumbs)
1/3 cup skim milk
1/2 cup peeled and shredded potato
1/2 cup shredded carrot
1/4 cup diced (really small) onion
1 t salt free seasoning
1/2 t garlic powder
1/2 t onion powder
1/2 pound ground beef
1 pound deer burger

1/3 cup ketchup mixed with 1 t Worcestershire sauce

Mix all ingredients together except for ketchup and Worcestershire sauce. Shape into an 8x5 loaf. Place on greased cooling rack on foil-lined cookie sheet. Bake at 350 for about 45minutes. Slather with ketchup mixture. Return to oven for another 30-45minutes until testing at 170* when tested with an instant-thermometer. Serve hot with choice of potatoes (I used french fries since we were having sandwiches).

  1. We'll be trying this tonight with roasted onion potatoes. I'm always hesitant to try meatloaf recipes because we've never found a really good one, but what can I say? WE TRUST YOU! :-)
