After getting shredded coconut at the store, I cannot remember why I bought it in the first place. It is one of those things that I normally do NOT buy since I cannot stand the texture or taste or something. I love looking for good recipes (especially ones that tempt my sweet tooth); I googled for a recipe that had coconut in it (hopefully to hide the taste well enough that I would not notice that it is there). I found the perfect recipe. Ranger Cookies. Ever heard of them? I had but never bothered trying them since I rarely have all the ingredients for them. Even though it is not the original reason I bought the coconut (or at least I don't think it was), I had to try them. I have a hard time just eating one at a time especially with a glass of cold milk.

Ranger Cookies

1 cup brown sugar
1 cup white sugar
1 cup shortening
2 eggs
1 t vanilla extract
2 cups flour
1/2 t baking powder
1 t baking soda
2 cups oatmeal
1 cup shredded coconut
1 cup butterscotch chips
Preheat oven to 350 and grease cookie sheets.
Cream together sugars and shortening. Add eggs and vanilla; mix well. Combine flour, baking powder and baking soda; gradually add. Stir in remaining ingredients. Drop on to cookie sheets. Smush slightly with hand.
Bake 7-9 minutes until golden brown.
Yield: 6 dozen
Oh yes, we grew up on these cookies. Your grandma "D" was good at keeping the cookie jar full. Those were thw days when cookies were not restricted!
ReplyDeleteThose sound sooooo good!! I so want to bake cookies today and I think these are the ones!! I have a similar recipe called "One Cup Cookies" ...there might be rice krispies in those though!
