Light, Airy & On Cloud 9

What sounds good when summer get togethers come to be? If time allows, I love making this yummy (and quite easy dessert). Make sure to read directions fully before jumping ahead...I know it is very hard to do.

Creamy Raspberry Dessert



Crust
1 cup graham cracker crumbs (I like using Oreo - without the filling, since chocolate goes with everything)
3 T white sugar
1/4 cup butter, melted

Squish together into a 9 inch greased spring form pan. Bake at 350 for 10 minutes.


Filling
1 package (10 oz) frozen raspberries, thawed (I used 2 cups of the mixed berry bag at Costco)
1/4 cup cold water
1 envelope unflavored gelatin
1 (8oz) package cream cheese, softened
1/2 cup sugar
1 cup heavy whipping cream, whipped

Drain raspberries, save juice (very important). Set berries aside. In a small sauce pan, combine water, gelatin and reserved juice. Let sit for 5 minutes. Heat over low heat until sugar and gelatin have dissolved. Remove from heat; cool 10 minutes.
In a small bowl, combine cream cheese and sugar until smooth. Mix in berries and gelatin mixtures. Chill in refridgerator until partially set (30 minutes or so)...watch carefully. Gently fold in whip cream. Spoon into crust. Let chill for 6 hours or overnight. I chilled the final time in the fridge; my mom does it in the freezer. It is good both ways.
