From A to Zucchini


I remember the day when my mom would grow a huge garden to feed all of so much fresh produce. My mouth just waters thinking about all the yummy fruits and veggies she would grow. I remember one particular year when she grew a zucchini as big as my dad's forearm (or so it seemed to me, as a 3rd grader). My brothers and I brought it to school and gave it to the Principal at our grade school in Oregon. (Hi Mrs H!) The next day she brought me a recipe for zucchini pizza. Sounds weird but it is Awe-Mazing! Just try it...you will be surprised at all the yummy goodness it is! I am sure it can be adopted for vegetarian tastes too.

Zucchini Pizza


4 cups shredded zucchini, moisture squeezed out
1 cup shredded mozzarella
1 cup shredded cheddar
2 eggs, slightly beaten
1/4 t salt
1/4 t garlic salt (I add 1 heaping teaspoon of minced garlic as well)
1 pound ground beef
1 medium onion, chopped
8 oz can tomato sauce
2 t oregano (I usually use Italian seasoning)
1 green pepper, cut into thin strips
1/4 pound mushrooms, sliced
1/3 cup Parmesan

Mix zucchini, 1/2 of cheeses, and 2 eggs. Press into 10x15 greased cookie sheet. Bake at 400 for 30 minutes.
Brown burger with salts, until very fine crumbles. Add onions and cook until crisp. Stir in tomato sauce and oregano. Spoon over hot crust. Arrange green peppers and mushrooms on top. Sprinkle with remaining cheeses. Bake an additional 10 minutes or until cheese is bubbly and golden. If desired top with sliced tomatoes.
