Eating Dinner at 830pm Pays Off (Somehow)

Last night was one of my experimental nights. I had two chicken breasts thawing, and wanted broccoli too. I thought I would make some kind of concoction using these two ingredients. Hmm...how 'bout a chicken broccoli casserole. I googled and looked for various ideas of what else I could add. Here is what I came up with. BAP even loved it...wow!

Chicken Broccoli Casserole

2 whole boneless, skinless chicken breasts (season with your favorite seasoning), cooked and diced
2 cups frozen broccoli, cooked and diced
1/3 cup red bell pepper
1 cup shredded cheese, divided
2/3 cup mayo
1/3 cup onion, diced
16 Ritz crackers (or something similar), crushed
8 oz egg noodles, cooked according to package directions

Preheat oven to 375. Combine chicken, broccoli, pepper, 3/4 cup cheese, mayo, and onion. Place in a greased 2 quart baking dish. Top with Ritz crackers. Bake for 30-40 minutes until golden brown and bubbly. Add remaining and just let it melt. Serve on top of pasta.
